This qualification reflects the role of cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.  Completion of this qualification contributes to recognition as a trade cook.  This qualification provides a pathway to work as a cook in organisations such as restaurants, hotels, clubs, pubs, cafes, and coffee shops.

First year: Mondays for 26 weeks across the year, Second year: Tuesdays for 22 weeks across the year, Third year: Wednesdays for 22 weeks across the year along with breakfast, lunch and dinner services through Prospects Restaurant.

Approximately 2 hours per week of self-directed, independent learning

For all TAFE applications, pre-training review questions and a literacy and numeracy review are part of the application process.

Applicants need to demonstrate the literacy and numeracy skills required to undertake this course through a test as part of the application process. The test will be conducted through Federation College prior to commencement of training. Feedback will be provided to the applicant on their results and types of support, if necessary, available to them.

Material Fees

Material fees cover the cost of items which are purchased by the university and provided to the student, such as tools, materials, uniforms, textbooks, excursions and other incidentals associated with the course.

Students are required to supply their own chef’s uniforms, chef’s tool kit, black non-slip industry standard footwear.
